In Boston, I’d say “medium rare” in hopes of getting “medium rare,” but I’d get “well done.”

In Texas, I say “medium” in hopes of getting “medium rare” and get “medium rare.” Anything less than that will get you a plateful of freshly-shot cow still fidgeting from its wounds.
